Restaurant Manager:


As Restaurant Manager you will oversee all aspects of the Char 631 Modern Steakhouse Restaurant located in the Ramada Coquitlam Hotel. This position requires an individual with strong leadership, organizational, and interpersonal skills. You also must have the ability to continuously train and coach your team including new staff members during times of high turnover, keeping in mind our properties are kept at the highest level of cleanliness and guest satisfaction.




Manage operations

-       Establish and deliver high standards of service that are responsive to the needs of our guests.

-       Manage all aspects of staff training, development and performance of all food and beverage personnel consistent with Della Casa Restaurant Policies, Health and Safety guidelines and BCLC laws.

-       Prepare payroll and gratuity disbursement consistent with corporate policies.

-       Forecast business levels and service requirements accurately.   Have a solid understanding of the immediate business requirements and provide clear direction that makes most efficient use of manpower.  Our challenge is meeting the needs of an extremely diverse client group in a limited space.  Our food service operation must meet these ever-changing needs while being economical.  This process must be continually maintained and adjusted.

-       Maintain excellent communication with our Sales Manager. Take full responsibility for the smooth delivery of conference services and ensure group master billing is processed in a prompt and correct manner.

-       Represent Della Casa Restaurant in such a manner as to enhance the reputation of the company. Lead employees by personal example with a philosophy of work conduct and personnel development that leads to maximum performance and job satisfaction.

-       Frequent daily inspections of all food and beverage service operations with an eye on cleanliness, orderliness, ambiance, positive visual impact and service flow.

-       Assume a general leadership role throughout the property and act as duty manager on assigned or agreed on dates.

 Meet or exceed annual Revenue Budgets and maximize the Food & Beverage profit

-       Plan goals by properly marketing the product internally and working with the Sales Manager to market food and beverage externally.

-       Manage Expenses, labour and material resources directly related to the food and beverage operation

-       Establish selling price of liquor, wine and beer to meet sales objectives and manage and report on inventory and cost of sales monthly.

-       You must be familiar with a kitchen operation and maintain a close working relationship with the Executive Chef and kitchen personnel to ensure that food cost objectives is achieved.  Collaborate with the Chef to produce menus that accurately reflect the needs of the guests, collaborate on plate costing and policies to ensure that plate costing is managed, manage staff dining, inventory and analysis of food cost variables.  Responsible for calculating the food & beverage costs and preparing monthly reports.

-       Manage inventory of equipment and supplies related to the food and beverage department and ensure that service requirements can be met.

-       Assist in the formulation of long range plans for the food and beverage department, assist with budget development and prepare monthly food and beverage performance reports.


Preferred Knowledge/Qualifications:

-       Degree in Hospitality Management, or equivalent

-       A successful track record with a minimum of two years food and beverage experience in a similar capacity

-       Position involves daily guest and employee contact.  Candidate must have excellent communication skills both verbal and written as well as strong team building skills.


Physical Requirements:

-       Standing for extended periods of time.

-       Lifting ability up to 30lbs.

Line cooks (Multiple positions):


Prepare and cook complete meals or individual dishes and foods.

Servers (Multiple positions):


Prepares the tables, laying out napkins and utensils, making sure the condiments are refilled, performing all other preparation tasks. Staying updated on current menu choices, specialties and menu deviations, knowing if the kitchen staff is running out of any items…etc.

Handle the table bookings, direct customers to their tables, presenting menus, suggesting dishes, assisting in drink selection, informing customers about food preparation details, communicating specific customer needs to the cooks.

Maintaining proper dining experience, delivering items, fulfilling customer needs, offering desserts and drinks, removing courses, replenishing utensils, refilling glasses.

Prepare mixed drinks for service to your customers table.

Properly open and pour wine at the tableside.

Obtaining revenues, issuing receipts, accepting payments, returning the change.

Performing basic cleaning tasks as needed or directed by supervisor.

Filling in for absent staff as needed.

Assisting with special events as needed.

Greet all guests and owners warmly with an appropriate greeting.

Adhere to grooming and appearance standards consistently.

Understands and can communicate products and services available at the resort.

Must have some familiarity with basic cooking

Deliver room service for the hotel orders

Job Description


This is a hands on chef management position. The Chef will be responsible for a number tasks which are further described below. Key points are maintaining proper quality & freshness of food, ensuring sanitary procedures are being followed & costs are kept in line, both labour & food.


Basic Outline & Expectations:


• Accountable to CEO for key financial metrics relative to kitchen operations – labor cost, food cost, inventory.

• Responsible for training and developing team members

• Attend key meetings on a weekly basis – at various -level

• Support and be visible at key company events and initiatives

• Spearhead staff food knowledge, education, develop systems and programs to enhance the kitchen.

• Manage food production of preparation

• Follow kitchen systems and routines to strengthen standards and operations

• Maintain & build on the platform of a positive working environment with BOH/FOH team members.

• Responsible for sanitation and food safety programs.


Knowledge, Skills and Abilities:

• A secondary school diploma is usually required

• Related post-secondary education is usually preferred

• Food safe certificate level 1 minimum

• A few to several years of previous experience in high volume food preparation is



• Proficient with labour law

• Proficient with health and safety rules and regulations

• Ability to coach and mentor other staff

• Excellent communication skills

• Ability to deal with high pressure environments

• Good decision making skills

• Prepare dough for pies, bread, rolls and sweet goods, batters for muffins, cookies and cakes and icings and frostings according to recipes or special customer orders.

Bartender (Multiple positions):


Mix and serve drinks to patrons, directly or through servers

Collect money for drinks served.

Check identification of customers in order to verify age requirements for purchase of alcohol.

Balance cash receipts.

Attempt to limit problems and liability related to customers' excessive drinking by taking steps such as persuading customers to stop drinking, or ordering taxis or other transportation for intoxicated patrons.

Clean glasses, utensils, and bar equipment.

Take beverage orders from serving staff or directly from patrons.

Serve wine, and bottled or draft beer.

Clean bars, work areas, and tables.

Mix ingredients, such as liquor, soda, water, sugar, and bitters, in order to prepare cocktails and other drinks.

Serve snacks or food items to customers seated at the bar.

Order or requisition liquors and supplies.

Ask customers who become loud and obnoxious to leave, or physically remove them.

Slice and pit fruit for garnishing drinks.

Arrange bottles and glasses to make attractive displays.

Plan, organize, and control the operations of a cocktail lounge or bar.

Supervise the work of bar staff and other bartenders.

Plan bar menus.

Prepare appetizers, such as pickles, cheese, and cold meats.

Create drink recipes.
